HTML support in labels

A common requirement from our natural history subject matter experts is that scientific names must be italicized. I see that this use case is explicitly mentioned in the Cookbook but also that "HTML is not permitted in label or other properties".

Our 3D scenes (and viewer) often have scientific names in the "title" of the scene. A natural extension of this when developing IIIF support seems to be to pull this information from the scene 'label' in the manifest, but this is at odds with the requirement above. Is there a different way this can/should be done to support the scientific name use case or is there a possibility of extending this support to labels?
