Add Chinese (Simplified) to README.md

Currently, IBM Plex Sans supports extended Latin, Arabic, Chinese (Traditional), Cyrillic, Devanagari, Greek, Hebrew, Japanese, Korean, and Thai.

Maybe add Chinese (Simplified) as well?
