Add configuration Descriminators for Datastore configuration

Describe the bug

The DatastoreConfig types do not have concrete Descriminators defined in the OpenAPI spec.

We need to add Descriminators to allow for correct generation of OpenAPI clients. See https://github.com/Hyperfoil/Horreum/pull/1394 as an example
