Change Location of Config & Logs

Describe the solution you'd like Is it possible to change the location of the config and logs to a different location, particularly on macOS?

Additional context Right now, the config and logs are sitting in my Documents folder, which backs up to iCloud, so my iCloud Drive is constantly updating. I was hoping for a way to make that not happen, if possible of course!
