Maybe we should remove `dorny/paths-filter` from CI

It seems to be a leftover from a try to reduce the amount of actions that are run. Maybe it messes with the Codecov reports, see PR https://github.com/Getdeck/beiboot/pull/75, where the coverage is reported as being reduced by ~30%, while only a github action is added.
