Same here. A fix is modify the level.dat so it lets you load it in 1.16.201, and the crash does not occur in 1.16.201. I did this on my best...
Try starting the world on the official server and then joining from the Launcher.
The third person thing worked. I think a note about it should be added to the launcher.

A temporary fix is simply setting your desktop picture to solid black and play in fullscreen. You also have to hide all open apps.
