Add ability to manually specify the adapter type from CLI

The code from the CLI currently assumes guessAdapterType is correct, it may be useful to have a override

Maybe --adapterType flag

More custom adapter types may need to use add-track-json or similar

:+1: this would be useful when adding a sparql track with an endpoint that does not contain "/sparql"
