Expand the Export of Additional Info in the Export Endpoint to Other Routing Profiles.

At the moment, the topojson export endpoint provides additional information about the edges of the exported graph (like an osmid, or further tagged information) for the wheelchair profile only (see #2008 ). This functionality would be great to have for other routing profiles, like foot-walking or biking, as well!
Additional context
This functionality would enable the use of the export endpoint as a data source for further modification that relies on osm data or data beyond the edge weights (see internally https://gitlab.heigit.org/climate-action/plugins/walkability/-/issues/151 for example).

Oh, from the information @takb had on #2008 enabling this feature would probably require changes to the graph bulid processes for the other profiles iirc
