Track usage of Gutenberg

Description

For developers it would be very useful to know how many sites actually use the Gutenberg editor vs. the Classic editor so that it's easier to decide where to focus future development.

Also, the cumulated data could be attractive for the WordPress community in general.

The SDK's function is_gutenberg_page would probably not help since it only tests on the actual page where blocks are used.

Describe alternatives you've considered

Alternatively developers could built their own solutions and collect data, which is very inefficient.
