Had the same issue in the Simple Calendar app for about a week now

In my case, this issue occurs after Android or app update. The workaround is to restart the phone.

~~I have the same issue. It does not seem to be tied to any updates. Restarting the phone results in an up-to-date widget, but the widget does not update afterwards. Greying out of past entries works correctly, they are just not pushed out of view on the next day.~~ Edit: I stand corrected, I just noticed that there is a setting to show the past X days/hours of events in an event list. It was set to 1 day. Reducing this to a shorter timespan results in the behavior I expected

Issue still occurs on version 1.2.0 Using the Calendar monthly widget. Today's date May 3rd should be highlighted, but the widget still shows May 2nd highlighted. Interacting with the widget updates the highlighted day.
