Spike: Continue to use the existing MCP setup, or build our own?

The outcome here is to determine which of the following options we should take with regards to the MCP product:

1. Continue to use the current implementation using Gram, hosted by them
2. Continue to use Gram, but host it ourselves
3. Build the MCP server from scratch using another technology, and host it ourselves

The approach should be to review the current setup using Gram, identify alternative technologies (for option 3) and to detail what the pros / cons are of moving off Gram.
