Probably too late looking at the progress, but would a whitelist also bea feasible option? My use case for EarTrumpet is to only control certain programs with it, keeping the regular mixer as well. Commenting here because I think it could fit in the same context.

Hey, sorry if not the right place to ask, installed from Microsoft Store today and was wondering where I should go to pick up a version with this feature implemented. I'm fine with using a beta or dev version if it means I can blacklist apps from the list.
