Added Scansion to replace Gtkwave on MacOS

On MacOS, gtkwave doesn't work nearly as well as one would expect. Scansion (http://www.logicpoet.com/scansion/) is a native MacOS application and works a lot better. This PR replaces gtkwave with Scansion on MacOS only. Documentation has also been updated.

Hi. I'm not sure about replacing gtkwave for all MacOS users. I would add it as an extra note in the docs.

That's fine. If you'd like to add it to documentation, that works as well. The only downside is that the user will need to patch their apio installation to get Scansion to work after a apio sim. Not the end of the world :)

Gtkwave is a PITA to install and not very nice on Mac OS - this looks like a good thing... is there doc on how to integrate it?
