Set CI to Danish timezone

Description: We experience a lot of failing tests on CI because CI runs in another time zone than our local development environments. In order to make the tests on CI more predictable and stable, we should consider setting CI to the same time zone as our local development environments, that is "Europe/Copenhagen"
