[HelpWanted] Make a custom bootstrap theme

Hello

I would like to create a custom theme based on bootstrap (e.g. override SCSS variables or themes.scss). How should I proceed to overwrite the existing SCSS files? With the help on https://symfony.com/bundles/EasyAdminBundle/current/design.htm it is not clear to me how to proceed. Can someone help me?
