Default MATE color mode makes most things unreadable

Attached is what it looks like if MATE is put in dark mode before wx is installed. Which is basically unreadable. This wouldn't be a problem if it were possible to change this without an issue, as per: https://github.com/EUA/wxHexEditor/issues/219#issue-2129451769
