Add support for WP.org API mirrors

Description

As we've seen WP.org being shut off from WPEngine (weaponized), support tickets are coming it about it.

We should support one of the various mirrors coming out.

Context

Ensure the plugin is not 100% entirely reliant on WP.org's APIs
