Added gymnasium and gym 0.26 support

We used https://gymnasium.farama.org/content/migration-guide/ and shimmy library. https://github.com/Denys88/rl_games/issues/261

We are supporting rl_games with IsaacLab. However, we are getting users to install gym==0.23.1 for RL-Games while our environments have moved to using Gymnasium.

Merging this MR would simplify our installation process.

Hi @Mayankm96,

Could you remind what gymnasium version is needed? If I am not mistaken there were some conflicting changes in the latest gymnasium and some libraries decided not to support the latest gymnasium. I think Maniskill was one of them.

We have now moved to Gymnasium 1.2 for IsaacLab. Would it be possible to keep the version at least more than 1.0.
