Improvements to PyPi listing/pyproject.toml

On the PyPi page for this project:

• the image from the README is not displayed properly
• the author field shows all the authors from pyproject that do not have an email associated, but then associates Giulia's email address to all of them
• change "Intended Audience" to something more appropriate from this list
  • consider adding more classifiers?
