Add flake support and build CI with flake

I'm not sure the github action is really necessary for here. What do you think?

Thank you for this! We'd like to drop the GitHub action, but we're good wth the rest. We'll add a note about the flake being experimental with the next release.

I'm also happy to drop the action myself and merge it's been a little too long :smile:
