Add xarray example

Xarray is something we should have an example for.

Task:

  1. Example using Hamilton.
  2. Creating any issues (e.g. like adding @extract_columns support) found.

Note: This will likely require some "plugin" support to run - e.g. something like this PR did for Vaex.
