Clarify TEA Product fields

Modifies the documentation of the TEA product and completes its JSON schema according to what was discussed at the Koala Workshop.

I'll rebase it tomorrow. We probably also need to rename tea-index to tea-product.

This is blocked by #114 and #119: I can not synchronize the fields of TEA Product in the documentation and OpenAPI schema if those are going to change again.
