Feature description

Write Kafka Connect SMTs to transform OpenCDC to Kafka Connect, Debezium, and Debezium Mongo formats. Vice versa is also needed (Kafka Connect, Debezium, Debezium Mongo to OpenCDC).

This is a blocker for the schema normalization work for the Meroxa platform team.

We don't really have a timeline on the schema normalization work so this can be delayed and doesn't need to be in the next conduit release.
