Add example in docs on the sphere
I think it's time to do that.

oh, you suggested barotropic... yeah, that'd be even simpler!
I was going to work on a singe_gyre example today with a student. I am happy to try converting this to a lat-lon grid, unless someone else wants to?
When you say barotropic do you mean few vertical grid points or ShallowWater? I think using the HydrostaticModel would be a good idea since it doesn't have the CFL constraint of having to resolve the surface gravity waves.
I have updated #1085 so that it runs, but it's still on a rectilinear grid.
My next step is to update it to a lat-lon grid.
Do we want to do this on a new PR?
I think it's most important right now to have an example with the hydrostatic model on the sphere
