Calibration: update calibration dashboard with new calibration output format, and new Makie observables API

ClimaCalibrate.jl outputs from Atmos and Land are now unified, using Kevin's flatten and unflatten API to format diagnostics in the observation maps. the calibration output dashboard needs to be updated to work with this new format. Furthermore, Makie.jl released a new API for observables, much more stable.
