Mention JDK version limits / recommendations

Recent Java versions seem to be incompatible with lolo but maximum versions aren't stated in the docs.

I don't know what the limiting versions are but I've confirmed the following. Perhaps we could recommend at least one working combination.

Works

openjdk version "11.0.24" 2024-07-16 LTS + sbt1.10.2

Does not work

JDK 23 + sbt1.10.2
