[REQUEST] Upgrade Docling from v2.5.2 to v2.12.0 for GPU support

Summary
Request 1: Bump Docling Version
Dowling's v2.12.0 introduced GPU acceleration: https://github.com/docling-project/docling/releases/tag/v2.12.0. Could we bump the Docling version to this or higher?
Running kotaemon on-prem, it takes around 5 minutes to ingest a 160 page PDF. I have some 1,100 page PDFs which I gave up on because it had taken almost an hour and hadn't finished yet.
Request 2: Log Docling Progress
Moreover, in the docker kotaemon container logs I cannot see the progress of the import/ingestion of a PDF. Is it possible to see the progress as a percentage or something, to get a sense from the logs that something is happening?
Basic Example
Import a 160 page PDF into Kotaemon and notice that it takes around 5 - 10 minutes.
Drawbacks
Version bumps can always break things. Do we have a robust way of testing a docling version bump?

By the way, I am happy to put out a PR for this. It would be my first PR into this repo, and I would like some guidance on automated testing.
