Hi,

Is the server IP that plex is installed on shown to the provider when watching a stream or will it be my home connection?

I have no idea, but there are reports that provider gets the IP of the devices that is actually watching the stream.

It depends on how the stream is watched. If it is direct played it is the IP of your home connection. If it is transcoded it is the IP of the Plex Media server.
