Your device is very old, game audio isn't (currently) supported on such old mac devices. (Only if they are running Linux audio will work). Minecraft 1.16.10.x is the last version with working audio.

Do you have a date on when the new version will get released?
No, your device is ca. 14 years old. I have currently no idea what is the problem, after I realized there is no gamepad connected in the log. I have no such old mac device. It seems to still work on newer mac devices. Press edit profile and go back to 1.16.221.

Even the latest beta works nicely on my pi 3b+, you're amazing! (I'm using the github hook release with changelog as 'nothing'... Just for info, the latest beta works on both arm and arm64 OS'es I can't confirm any x86 architectures, since I don't own any x86 devices....
