Add 'stress_category' output to heat index models

For the heat index functions, we should allow folks to return 'stress_category' similar to the recent changes made to the utci function. This will become handy for the plots we are planning to implement. @FedericoTartarini Let me know if you are planning to do it. If not, I can implement it in the current cycle.
