Convert all notebooks to be model agnostic

Yes, definitely. Perhaps @adele-morrison you can just open 2-3 issues with the examples you think are more important to convert and we can take it from there?

But I'd suggest that before people start working on making those examples model agnostic, I'd like to give a small presentation to those who will (during the workshop/hackathon day) regarding good and bad ways that this model-agnosticism is achieved.
