Updated Documentation (next VR)

PR #198 did not update the documentation in dev. I also want to write directions for GPU deployment for Nvidia GPUs. This must be completed before the next version release

Documentation builds were failing on readthedocs because of this issue #210; the merge from main into dev #226 should fix it
