Update to Java 25

What needs to be done

Update our backend java version and other associated resources like docker image versions to use Java 25

Why it needs to be done

We want to keep relatively up to date with supported Java versions.

Acceptance Criteria

• Backend should continue to function normally, as should the rest of the app
