Add new field for CSV bulk upload: patient_sex

Description

We need to add a new field, and have it override the previously deprecated field if provided. Update example template and guide.

Proposed solution

Add new field: Patient Sex

Guide info: Patient Sex Required Column header: patient_sex Description: Patient’s biological gender Accepted values:

• m
• f

Followup from EO. Current template is broken until we add this.

Acceptance Criteria

• [ ] New field Sex added to the bulk upload API. Options are Male / Female
• [ ] Field overrides the deprecated field
• [ ] Static site / guide is updated with the new field
• [ ] Example template is updated with the new field
