Update MDX dependencies and refactor syntax highlighting

Upgrade MDX-related dependencies and refactor the syntax highlighting component to use the updated API. Adjustments made to the handling of themes and plugins enhance compatibility and performance.

This will allow adding nested unordered list inside a numbered list.
