Bannerlord and ManAtArms
Bannerlord and ManAtArms perks should not include villages, because only castles and towns are counted as fiefs. I got 7 castles and my army already over 500 man, this is ridiculous.

I don't know about this one. On the Clan Sheet (L), it lists Towns, Castles, and Villages under the Fiefs tab. But on the Kingdom Sheet (K), it only lists Towns and Castles under the Fiefs tab. So there is at least some conflicting information from the game about what the correct definition of a Fief is.
If we look at this from a game design / balancing angle, most lords in the game start with owning around 3-4 Towns/Castles (which is close to ideal for total faction strength). If we only consider Towns/Castles as Fiefs for these perks, you are looking at a troop limit bonus of 6-8 for Bannerlord and 15-20 for Man-at-Arms. If both perks are active that is a combined bonus of 21-28 to troop limit for the majority of the lords at the start of the game. I think it is reasonable to expect the more successful lords and players to be able to achieve around double those numbers (ie. 6-8 Towns/Castles) after some time, which would equal a bonus of 42-56 with both perks. It is unrealistic and a bad choice for a single lord or player to have more fiefs than that. It is much better for the total strength of your faction, to have more lords and spread the fiefs between them.
There is also the consideration that both of these perks have competing perks at their respective ranks, and depending how you value their effects to your playstyle, choosing BOTH Bannerlord and Man-at-Arms may not be what most lords or players choose. (I would personally choose "Logistics Expert" over "Bannerlord" for most playthroughs)
Most Towns have 2-3 bound villages and most Castles have 2 bound villages. If we include Villages in the bonus calculation, that will average out to around 3.5x the strength of the effect. So the numbers then become 21-28 for Bannerlord and 53-70 for Man-at-Arms or 74-98 combined for both perks for most lords at the start of the game. So a bonus of around +200 for the upper limit of what is reasonable if you have both perks based on what I mentioned above.
To boil everything down to single numbers using averages, you are looking at: +2/fief - Bannerlord No Village +7/fief - Bannerlord w/ Village
+5/fief - Man-at-Arms No Village +18/fief - Man-at-Arms w/ Village For every Town/Castle you own.
Here are some of the other max party size bonuses you can get: +150 Clan Tier 6 (a lot of work to get this high) +82 Steward skill level (a lot of work to get this high) +80 Ultimate Leader (a lot of work to get this high) +4 Conroi +2 Squires
Judging by the other ways of increasing your party size and the amount of effort to achieve the various bonuses, it looks like NOT counting the Villages in the bonus calculation is probably the intended/balanced way.
