UX: Replace help side bars with dialogs

The side bars / drawers with contextual help info are not easily closed. Suggest replacing them all with dialogs.

Also there's a bit of glitch with the close button which seems to be hard to hit. screen shot 2017-08-15 at 10 23 24

The sidebar glitch is fixed since PR #329 - so this issue is low priority.
