Migrate markdown issue templates to YAML based issue form templates

Not a problem, rather something I feel would be an improvement for both contributors and customers.

Describe the solution you'd like

I'd like us to consider to migrate markdown issue templates to YAML based issue form templates.

YAML configured issue forms would enable us to build structured forms with required fields and easy-to-follow steps so that it can capture every important detail. With markdown it's easy to miss details or get confused when the contributor or the customer fills in.

This offers an improved experience.

I'd also be willing to help with the migration/convertion.
