Reorganize Documentation Structure

This PR simplifies the documentation structure by:

• Removing nested category folders (contract_tutorials and js_tutorials) in favor of a flatter structure
• Moving tutorial files to the top-level tutorials directory
• Removing the Uniswap tutorial files that were in the js_tutorials/uniswap directory
• Updating the token bridge tutorial with proper tags and sidebar position
• Improving the docusaurus configuration to better handle development environments
• Updating npm scripts for more consistent naming and behavior

These changes make the documentation easier to navigate and maintain while preserving the core tutorial content.
