@sillysam100 Sorry for such a late answer, I'm only getting back to Audiveris tasks.
Indeed, it is technically possible to support a new set of head shapes. It's just a matter of providing proper templates, since in Audiveris head shapes are recognized via an adhoc template matching techniques. For further details, you can have a look in source code, starting by HeadsStep java class.
The main concern is about the potential collateral damages brought by these new shapes: the more shapes you have to handle, the lower recognition rates you get.
To my knowledge, there is no popular demand on this. So, it's up to you if you want to engage in such task.
A significant progress has been made thanks to Brian Boe (@brian-math ) on drums notation. Your request is rather similar: specific head shapes.
It's always a matter of amount of work vs number of interested people...
