I'm really liking the new widget! There are two things I'd really like to have.
- Widget theming
- Especially the ability to set a background color(that includes transparent), and a text color. It's jarring to have a dark theme home screen, but have a white background.
- Widget system font. Honestly it'd probably be best to just remove this as a specific widget setting, and have the font match the one in the feed view. I don't know any other android app with a widget that lets you set a custom font different from what the app uses.

sounds like an implementation issue of your launcher app? the widget is designed to have dynamic colors retrieved from your launcher (or system-wide theme)
and have the font match the one in the feed view
sans serif is the default font if you don't set a custom one in your app. And Android do not provide custom font supports for widgets (you can only use sans-serif and serif)
Many people use a launcher with a dark background with white text, even during the day / with system light mode.
Or they'd just prefer, like myself, to have a transparent background so they can see their wallpaper and not have it blocked by widgets.

Which launcher? I'd recommend filing a feature request with them to add an option for returning a static color scheme for widgets

transparent background is not very good for legibility, especially in the context of a text-dense widget. semi-transparent is acceptable while still a tradeoff in accessibility and could look worse sometimes
Most apps that have customizable widgets (tasks.org) use android's color picker anyway, which lets you set your own transparency level. Best to let the user decide what they want there.
The app itself is opinionated in many aspects and specifically, following material design guidelines. When it comes to adding a new configuration i would always go through this piece: https://neugierig.org/software/blog/2018/07/options.html
Anyway thanks for the suggestion and it's noted
