Added `Colsmolvlm` support

In this PR, I’ve added support for ColSmolVLM.

The code is fully functional, with the only pending issue stemming from the colpali-engine package, as the latest package version has yet to be released so I can't update pyproject.toml:

"colpali-engine>=0.3.4,<0.4.0", ---> "colpali-engine>=0.3.5,<0.4.0",

Perhaps @ManuelFay @tonywu71 could lend a hand with this? 😄

I’ve applied the same approach as in #29.
