[Feature Request] "Fallback" blocks when downgrading/converting a world.

Feature Request

The Problem

Amulet is one of the few tools that allows to convert a world from Minecraft (Java Edition) 1.13 to Minecraft 1.12 or lower (Thank you very much for implementing this by the way). There is one minor problem with this though. News blocks added in the source version (example: Minecraft 1.13) are turned into air in the destination version (example: Minecraft 1.12).

Minecraft-Tools, another tool to convert a world from Minecraft 1.13 to Minecraft 1.12 or lower (if you don't mind losing all the content of your chests), handles this problem by converting the blocks in the source version to equivalents in the destination version. For example, the prismarine slabs added in Minecraft 1.13 are converted to classic stone slabs when converting to Minecraft 1.12.

Would this be possible in Amulet? What do you think about it? Is there any way to contribute if you find it interesting?
