Update custom sandbox doc

After https://github.com/All-Hands-AI/OpenHands/pull/4283 PR, updating the document to set the SANDBOX_BASE_CONTAINER_IMAGE in both ways

This should probably wait until our next release to be accurate since the change required is on main still.
