Update Instrumentors to use simple system for labeling data

Our goal is to create a clear and simple system for labeling data. The semconv module will help make data processing more efficient and reduce errors by providing a consistent framework for all instrumentors.

open-telemetry semantic-conventions is yet to release their gen-ai semantic conventions. Implement our own conventions module which sets up our own rules for labeling data from instrumentors.
