When a is set, the subtitle isn't available in vlc plugin. Maybe it's not possible.

Unfortunately this seems to be a dead end. Subtitle is not supported with external .srt files (:sub-files option) in latest VLC Web Plugin version, this feature was officially removed for security reason according to Jean-Baptiste Kempf.

I use https://github.com/SunnyLi/videojs-ass/ along with this vlc plugin. Subtitle are rendered in javascript and displayed in an overlay over the video. It work great, you need just a little script (php, python, whatever) to convert on the fly srt subs to ass subs.
