Create a Docker Compose for Menas

Description

Since we have FE and BE separated and for ease of use, we could create a docker-compose allowing for fast setup of Menas + MongoDB. This will lower the mean time to test quite a lot

This could be located in Examples or in scripts

EDIT: Also speeds up access to Swagger docs
