Update "Canada Holidays" API

Hi there, I submitted the Canada Holidays API a few years ago. Since then, I have updated the API definition, so I am adding the new link here: https://app.swaggerhub.com/apis/pcraig3/canada-holidays/1.6.0

API updated (to v1.8.0), many thanks for the contribution! The API will be live on the website after the next CI run.

It's a pity the swaggerhub API doesn't have a /latest or /latest-public endpoint unless there is one I don't know of...

Sorry for pinging @hkosova / @frankkilcommins, it looks like https://api.swaggerhub.com/apis/swagger-hub/registry-api/settings/default endpoint will do what I need.
