Upgrade Appwrite Backend to v1.8.0

I’d like to work on upgrading the Appwrite to v1.8.0, which will introduce major architectural change by replacing the older Collections/Documents model with the new TablesDB API.

This update will ensure better compatibility with the latest SDKs, improve performance, and align the backend with the latest Appwrite architecture.

Proposed Chnages Update backend configuration to use Appwrite v1.8.0 Adjust SDK calls and endpoints accordingly Migrate existing data structures from Collections/Documents → TablesDB

I'll be opening an issue in the backend repo aswell. Kindly assign this to me

Part of this issue was completed in #599 , so the scope will now change to shifting to TablesDB API
