iconsole as source?
I just found your project. I wonder if it would be possible to connect the iConsole devices via Bluetooth instead of the serial connection. There is already a Java implementation of the iconsole protocol: https://github.com/haraldh/iconsole-android
The iconsole is used by many fitness device manufacturers - unfortunately it is not compatible with apps like Zwift or Rouvy. So it would need a converter like your project.

From what I understand: This software won't help you. It"s based on Kettler's protocol, a very specific piece of hardware

You probably saw this : https://github.com/haraldh/iconsole I am prety sure that you can install it on a small raspberry + ANT dongle (30€ burdget) It need to run zwift on a PC or some android tablets with ANT+ support
